Because it's still a unique and fleshed out space setting suitable for adventure that isn't as nerd-centric as Star Trek.
Star Wars has very cool aesthetics, aliens, ship designs, and major factions, as well as a generous practical conventions for FTL travel and other quasi-magical technology that make the setting a fun place for exploration and conflict.
Of course Star Wars wouldn't be what it is without the force but it has more to offer than just that.

The OT had a few esoteric powers now and then, used only sparingly and by the most powerful figures in the setting. Their abilities were about perception and subtle manipulation.
Luke essentially WAS a mechanic, just one who knew how to drive the manual transmission on an X Wing. His only real heroic action sequence was on Jabba's sail barge beating up illiterate pig men, he spent the rest of the time getting his ass kicked.

Why do so many Star Wars fagits want to see movies and shows where the story is set up from the beginning for an eventual great victory by the "good guys". I want to see a movie from the perspective of the Sith. I have had enough of the Skywalkers and the Jedi "good guys". I'm sure the Sith believe they are the good guys because they built a great empire across the galaxy, building vast infrastructure and creating millions of jobs for millions of people. Star Wars of fucking cheesy and boring and predictable. I want to see a story about the Sith, about the Empire, about the First Order, and about how they endeavor to do great things for the benefit of the entire galaxy.

because jedi are supposed to be rare and powerful things that most people in the universe never meet so when they do it's a big fuckin deal. When you have 9 movies that center on jedi it becomes almost more common to see jedi than normal fucking people.
