The logical ending is for each kingdom to regain independence. The Iron Throne and the unified seven kingdoms only exists because of Aegon's Conquest. Dismantling the Iron Throne would only revert Westeros back to its pre-Conquest state.

It does though. Dany's origin story is a separate (less interesting) novel set in the same universe. Her role in the main story (set in Westeros) is to appear with an army and her dragons and fuck shit up. But she can't do that, because her own prequel is out of sync with the main story. She's not where she needs to be when she needs to be, in order to appear in the main story and move the plot along. Instead of supporting each other, the two plotlines clash and we get shit like travel chapters and endless red herring subplots in Westeros.

The idea was good, but the execution wasn't. Dany's origin story was progressing too slowly and gurm couldn't wrap it up in time, ultimately derailing the main plot in Westeros. And as entertaining as Dany's adventures may be, most of the characters readers care about aren't involved in the Meereen story. The setting isn't as compelling as Westeros and no one's really emotionally invested in the fate of the city, or Slaver's Bay in general.
