My experience with streaming in general is that while they can look pretty good, the subtle stuff like film grain is pretty tough to make look good with any sort of compression. If you are really picky, I bet you'll notice some stuff.

A significant number of those movies are not art house. Art house doesn't mean old, or black and white. Seven Samurai is a straight up blockbuster. Literally any of Kurosawa's movies would be a better choice than Seven Samurai.

Criterion doesn't always pick a director's best work to include in the collection. Oftentimes they can't afford the bigger movies. Citizen Kane isn't in the collection but 6 other Welles films are. Rumble Fish is in the collection but not Apocalypse Now or the Godfather.

Yes they do. There's no valid reason for why players/TVs can't play back any video interlaced or not. On PC you can playback anything - if consumers wanted the same for blu-rays, they could simply protest. again, color grading is not always in Criterion's hands (nor are they the people directing these restorations). e.g., a good ongoing issue concerns restorations done by L'immagine Ritrovata which are color graded with film projection in mind and takes into account the color temp of the bulb in the projector. unfortunately, without alteration for digital video, this gives the image a yellow tint, but L'Immagine Ritrovata DOES NOT allow others to alter this coloring for blu-ray releases, and companies like Criterion are bound to it (or forced to use older, less detailed transfers, which also may or may not be totally "correct" in color or other ways). some recent Criterion/L'Immagine Ritrovata releases if you want to take a look are The Colour of Pomegranates and Death In Venice, and it's a shame because everyone knows the coloring is off

A fraction of NA BD players support PAL. If you're the kind of person who doesn't settle, you can buy the Arrow version. Had every north american BD player support PAL, I guarantee you that's what Criterion would have gone with.
Blu-ray, digital formats, and these limitations in general may be intrinsically different from how many artists would truly want their film seen. I imagine many don't even like the idea of watching their film a way other than in a single cinema theater with a 35mm projector and a professional projectionist, but compromises sometimes have to be made, and Criterion avoids them as much as realistically possible.

It’s not Criterion’s fault that there are PAL and NTSC standards. They’re not TV manufacturers. They still spend a lot of money to restore classic movies and present them in the best quality possible while you act morally superior because you watch them for free on VLC.

There isn't as much point to publishing a work that is ubiquitous. Part of Criterion's mission is built around making films available that might not otherwise be easy to find.
Godfather's a great movie, but why waste resources putting out a film everyone's already seen when you can put out a lesser known, yet arguably equal work done by one of the film greats?

They're doing good work don't get me wrong, but there are thousands of movies that will never end up on criterion for one reason or another, and they're much more entertaining than the low-end criterion stuff, with a few being better than even the best criterions.
