I've wondered why in exorcism movies its always a catholic expelling the demon, why is that?

Read "An Exorcist tells his Story" by Fr. Amorth. Exorcists are very adept at diagnosing real victims of demonic possession.

Popular notions from art and literature. Very, very little of what we see being portrayed about demons and the devils come from canonical writings in the Bible.
The devil himself is very rarely mentioned by name and the entities we have conflated with him are never specified to be the devil, like the serpent, legion, lucifer, the dragon and so on.

first, it makes the assumption that God stopped speaking with the "conclusion" of the Bible. this puts a strange restriction on the power of God.
second, it runs contrary to the meaning of Pentacost (Biblical, by the way).
third, the books selected as canonical included letters written post-Christ by church leaders. Peter's letters are basically church encyclicals, which are practiced today.
fourth, the selection of canon was done hundreds of years post-Christ. in other words, the decision of what "the Bible" would be was made after the books of the Bible were written. this editorial practice was either inspired or it was not. if it was not inspired, the Bible has no authority, since the Bible came to exist only through this council, or there exists extra-Biblical, but still human authority.

Mother Church recognizes that some extraordinarily pious individuals are gifted charisms at God's discretion, some of which are able to drive out unclean spirits. Still you are right in that these persons are not sanctioned exorcists and are, by and large, an exception to the rule.

Your fourth doesn't mention that biblical cannon is done under the guidance of the word, with a gathering of "all the believers" in the case of the councils which decided biblical canon, representatives from all christian churches.

Post council canon is irrelevant since it was decided without the entirety of the believers, or acceptable representatives thereof. Therefore Catholic canon is irrelevant.

Catholics follow hundreds of rules and restrictions that are not even inspired; for example, the pope's manner of dress, his very role, cardinals, priests being forced celibates.

The bible says that leaders in the church should have spouses and children, and be the master of them. Those are some of the fundamental requirements to lead.
The corruption in the Catholic church is the evidence of their unsuitability to lead, they haven't even got families to lead so how can they shepherd the flock?

Hollywood is Jewish to its core, not Catholic, so while there are reasons from a Catholic perspective why it should be Catholic clergy exclusively, that's really not why the movies are the way they are. However, from a Hollywood perspective there are two main reasons.

Historically, mainstream Protestantism generally opposed itself to what they considered Catholic superstitions, which might also include demonic possessions and exorcisms. Not to say that Protestants discounted the possibility, but might say that exorcism belonged to the Apostles' time and that demonic possessions don't really happen anymore in this day and age. So exorcism was only really emphasized among Catholics, maybe fringe Protestant groups, and only recently has become more emphasized among Protestants with the advent of the Charismatic movement and Pentacostalism. So exorcism is really just Catholic thing, especially back when the Exorcist was made.

Second, Catholic imagery is just cooler and more cinematic. No one wants to pay $10 for a ticket to see some guy in a suit and tie (or maybe just a t-shirt nowadays) trying to cast out a demon while speaking in tongues. They want to see a priest in robes speaking in Latin, throwing holy water etc. It's all about selling tickets.

Finally, the Exorcist was never really a Catholic movie. Hollywood uses Catholic imagery to sell tickets, while at the same time subverting good morals, the Catholic faith and the authority of the Church.

Yes, that is true, and in many dioceses, there is not a single exorcist. Of course, there are often many other Catholic things missing from these places, but at least we're being welcoming and affirming of gays and Muslims, right? :)))
