In retrospect, Jar Jar was acceptable given the target audience. "People" tend to forget that these films were primarily targetted at children, not adults, especially middle-aged virgins. Sure Jar Jar might've been a clumsy character but he helped balance the tone of the first film in the saga, not to mention that he was important to the plot and served a key role in its story. He was never offensive as "people" made him out to be.

Lucas showed us a different side of Vader/Anakin with the prequels, a side of him that nobody ever considered or imagined yet everyone knew had to exist. At some point, Anakin had to be a young boy, it's not like he comes out of the womb a fully grown man in the suit. Showing him at his most innocent at the beginning of the story also mirrors the end of his story, where he's at his weakest and most vulnerable, dying in the arms of his son. Pottery, in other words.
