Dragon Ball is mostly skippable, plus it has no remaster. I'd watch the first few episodes though just so you get introduced to Goku, Bulma and the world.

Dragon Ball Kai is the remastered and cut version of Dragon Ball Z, takes out filler episode and is fairly high quality.

Dragon Ball Super is the current series.

So, first 10 episodes of Dragon Ball -> Dragon Ball Kai -> Dragon Ball Super -> Dragon Ball Super Broly Movie

As someone who saw this 20 years ago and thought it was the coolest thing ever, I'm currently rewatching it daily with my wife from the beginning.
First saga aged horribly, because it's full of a lot of the legacy style of it's progenitor Dragonball which is a prequel. A bit slow at some points but this sorts itself out as it goes on a reduces a lot of boring shit with not enough of the main plot advancing.
Halfway through the second saga this sorts itself out. Not bad since there's 9 main sagas in total.
We're enjoying ourselves watching it. Neither of us are big weebs, we will watch through an anime once a year probably.

Funimation dub is THE best DBZ dub solely because of the Bruce Faulconer soundtrack. His score set the perfect tone for certain scenes, and really made the series unforgettable. His use of metal guitar mixed with new age synths and industry drums helped give the series an almost mythological feel to it and really complemented some of the power up / "oh shit" moments.

It was fun as a kid/teen, but doesn't really hold up. If you didn't grow up watching it, just pass.

There are good Shonen where characters don't become irrelevant punching bags, fight scenes aren't just 2 frame gifs of one character punching fast and the other character dodging fast, and battles aren't resolved by the protagonist doing pushups at exponentially higher gravity levels while the punching bags are dying elsewhere. To watch the entire DB series would take you about 230 hours, or almost 10 entire days of your life. Don't do it. It's not worth it. If you're going to waste your life watching Anime, watch better stuff.

I'd recommend watching Bardock: the father of Goku, History of Trunks, and Super: Broly, the latest movie. All of these are considered canon in some way, though Bardock is debatable now with retcons by Toriyama. It's still the highest quality version of Bardock's story by far. Also for sheer quality, watch Wrath of the Dragon; not outright canon, but it doesn't mess with the Canon either, and it's a legitimately great movie.

Each episode following the boy saiyan and his pals from the Z warriors as they fight assorted villains has been indistinguishable from the others. Perhaps the die was cast when Akira Toriyama selected Toei animation to do the adaptation; he made sure the series would never be mistaken for a work of art that meant anything to anybody, just ridiculously profitable cross-promotion for his manga. The Dragon Ball series might be the inspiration for Togashi (or not), but it’s certainly the anti-HxH series in its refusal of wonder, beauty and excitement. No one wants to face that fact. He wrote something to the effect of, "If these kids are reading Dragon Ball at 11 or 12, then when they get older they will go on to read Hunter x Hunter." And he was quite right. He was not being ironic. When you read "Dragon Ball" you are, in fact, trained to read HxH.

Watch it in Japanese, starting from the original Dragon Ball and be disappointed as more and more characters show up only to drop off. Don't watch the American-English dub. It's very low quality, the old one is poor in quality but they had a go, the new one has some of the characters sound the exact same and there's a level of disappointment between DB and DBZ/Kai if you watch it that way, while the Japanese VAs are consistent all the way through. There's also this horrendous synthy-trash soundtrack that they replaced the original score with which is jarring, if you watch the movies you'll also have to deal with trashy rock music. If you don't watch it Japanese (w/ subtitles if you don't speak the language) then you may as well not watch it.

Super looks like this most of the time unless that one episode director is on staff. The art is far more consistent in these examples too, it's really just the action animation segments that are lacking, in Supers case you have a lot of shots looking fucked up even when it's stationary.

Start with the world tournament arc of dbz, with teenage Gohan. I shit you not it's the best place to start. Pretty much the entire series in referenced back to throughout, kinda feels like watching an episode of Lost where your finding out the strangeness and bizarreness behind the story as you go along. And the powers are explained real well by gohan when he's trying to teach his gf how to fly. Watch the English hd original cut of this, best music and dialogue, although pacing isn't as good as the Kai version.

I would say if after that you're still digging it that you go back and watch from the beginning of z, either original or kai version. And then if you like that, watch db. And then super. Only watch the movies if you've seen all up to this point and can watch them with an understanding that they don' fit into the shows timeline and are what if type stories.

The whole series is a guilty pleasure really, it's like a b movie, it has pacing issues, some cheesy dialog and humor at times, and some times bad animation. And it blatantly rips off american hollywood movies. But I tell you, the parts that are good are fucking amazing and will stick with you. There's something about it that's so damn charming and comfortable that I've never really put my finger on it.

Anyway that's my piece, good luck and hope you enjoy and become a fan. I'll admit I was that guy that made fun of how stupid this show looked until I finally got into it and fell in love. It's just a great combo of so many different things that it becomes it's own thing entirely.
