Because then there would be no conflict, and the entire story would be a bunch of heroes trying to beat him up for trying to make the universe a paradise. Also his motivation in the original story was an attempt to garner the love of Lady Death by killing half of the population of the entire universe as a wedding proposal, and changing that ruins the plot.
The dropping of the Lady Death arc is what made the film so stupid.

Pretty sure the point of that scene was establishing that he did actually care for, and it wasn't just a delusion.

But if history makes sense of anything in the future, it'll make sense of the fact that the definition of sanity is to avoid people who negatively impact a person's lifespan and life quality, and instead choose people who don't make one's life a misery, because lifespan is too short to waste on too many people (ergo pick from the top instead of the bottom).
Example: Transfreaks and dilation.
A post-op transfreak cuts off their penis and is left with an open wound called a "neo-vagina" which has a tendency to regenerate and close up throughout the transfreak's entire lifespan.

A person who's also constantly drugged up and has a high tendency to become a drug addict to compensate for the all aforementioned, while also harboring increasing suicidal tendencies as years pass by. The miserable experience of the 1st year of having a baby is FORCED onto the surroundings, except transfreaks are 10 times worse than babies and instead of 1 year you suffer them for decades.

Granted, we can't know the depths of the reasoning behind the stone, we can only go by what is shown to us, and what was shown is that the only way it would work is if the sacrifice was genuine, and we're talking about a piece of rock that is beyond omnipotent, is literally the galaxy itself, and clearly has powers beyond the scope of our imagination. To think it can't understand the difference would just be odd.

Why is it so weird to presume that Thanos genuinely loved Gamora and wanted for her to be his surrogate daughter so much that his sacrifice was genuinely agonizing? Other than his overwhelming presence and status as a virtually unkillable titan in the galaxy, we know nothing of his bond with Gamora other than he wanted her to be incomparably fierce and powerful in a galaxy that is ridiculously fierce and powerful, and was not willing to let her soften up under any circumstances.

but doubling resources would over-cramp planets. it would be stupid for thanos to have to create a duplicate of each planet. doubling resources just speeds things up faster. thanos obviously doesn't care about killing people so why would he do anything else?

The idea is that back before he was on his quest for the Infinity Stones, before he even considered them as an option, the only way to save his world was to do the 50% culling on his home world.
They didn't listen, his world and his people got destroyed, and he was driven insane with guilt over not managing to stop a catastrophe he saw coming.
Past that point, he isn't thinking rationally. He's convinced that the one thing that can be done, is what must be done, what should have been done, except everywhere, because if he couldn't save his home, he'll save everywhere else.
So yes, it doesn't make sense that he doesn't do a million and one other things, but he's not thinking rationally. He just sees a chance to do what he couldn't do before and looking for alternative solutions, the very idea of which cause his world to hesitate and die is beyond him, even though with the Infinity Gauntlet it would be easy.
That motivation is still silly for general audiences, they wouldn't be able to take it seriously.
"Ends justifies the means" is the go to motivation for big villains.
