Season 1 was targeted at the wrong audience, so it's super lame. About half-way through they remember who the show is supposed to be aimed at (manchildren not actual children) so Ahsoka stops calling Anakin "sky-guy", the droids stop being sarcastic bitchy gay guys and the violence escalates.
If you can live with fluctuating art style and characterisation, there's a chronological order floating around rather than the order it aired in.

The Umbara arc for Clone Troopers.
The arc where Ahsoka gets kidnapped by Trandoshans slavers and has to fight them in the jungle.
The arc based on the Soviet Afghan invasion where Ahsoka and the Republic arm a bunch of guerillas with surface to air missiles.
Shit man, just fucking watch it.
The first really good episode is Rookies if you want you can skip ahead to that one then skip anything with Jar Jar in it and consider skipping the Padme centric episodes. If its about the Clones, Anakin, Obi Wan or Ahsoka watch it.

Not a bad list but Padawan Lost and Wookie Hunt in Season 3 are fucking great. Ahsoka losing her light saber and getting chased around the jungle by lizards then teaming up with Wookies to kill them off. What's not to like?

It gets better after the first season. Season 2 onward has a lot of good stuff, but I think the show in general is hit or miss. Most of the "major" storylines that try to contribute in significant ways to the overall story are the weaker ones. Ahsoka's existence in general (though I do like the character in TCW), Maul's revival, Mortis -- they're a little stupid and contrived and demonstrate that being a prequel to a prequel is precarious ground to walk on. (Rebels didn't help anything.)
It's a great show, but I appreciate it more as a general action-adventure cartoon than as Star Wars.
