When I watch the show on Dish Network it is shown in 480p with hard-coded letterboxing for an equivalent 360p image with a low bit rate.
This does strange things to Katie McGrath's face. It smooths out every one of her pores and wrinkles, and makes her look extremely uncanny. Makes her look like she's wearing thick porn make-up or having been airbrushed. The overall effect is she looks even more severe than normal. And sexy.

The first thing to look for is if you see the word INTERNAL in a release that means it is an informal release by the group putting it out. It may not be up to their specs but it's out there because someone requested it or because they just want to cover all the shows coming out but don't have the "A team" working on it. It could be a perfectly fine release, or it could not and no bitching allowed.
Then you want to pay attention to if its a HDTV or WEB-DL release. Generally speaking, WEB-DL is higher quality most of the time with less logos visible and better encoding. If the show was ripped off of a cable or satellite box it will most likely not be true 1920x1080, but instead 1440x1080 that has been encoded to display in 16:9 (which the pirate group will have converted to true 1920x1080 for convenience, but the loss in image quality is still there).
Many networks also air shows only in 720p, and the "1080p" version you are getting is an upscale that has been done for you which supposedly will squeeze more picture quality out than if you had just used your player to upscale it. In practice this is pointless because your player will do just fine and you're downloading extra "fake" upscale data for no reason.
Sometimes things are just encoded badly. Constant bit rate encoding is more compatible with a variety of devices but it's also wasteful. If your device (hopefully a PC) can play back variable bit rate h.264 video then you should go for that.
Audio streams are a whole other topic and depending on what is available can add or subtract a couple of hundred megs up to even a gigabyte of data depending.

don't know exactly how they work but i've been downloading rips that say 10bit and those look pretty fucking good. also the ones that say x265 (not x264) tend to have very good quality for the filesize
You're on the right track. x265 is a high efficiency codec that needs more power for playback, but can result in much lower file sizes.

There is still a loss in resolution and dynamic range. Look at the lapel of her shirt in the lower right of the image. It is noisy and hard to make out in your corrected version. This is because even though the bit rate is 8000 kb/s constant it is a less efficient encode. Even though the high@l4 profile was used, other settings were chosen poorly.
The file size is only higher to preserve the quality since it doesn't get the luxury of using a 'master' like Netflix/Amazon does which are then directly downloaded.

I try to get hevc whenever possible, also trying to avoid the 10bit encodes since the limitation of the source makes it nothing but extra data.

HDTV derived. This is 1080p only by technicality. The level of detail here is somewhere between 480p and 720p.
Note: this is not an indictment of HDTV. HDTV can look amazing. OTA HDTV looks better than almost anything (even blu-ray in some caes) if your local provider is not screwing you out of a good picture.
But the idea here is just because it says 1080p HDTV and has a "big" (2.46 GB is not really that much) file size doesn't mean it will look great.

If you are seeing washed out color in a 10 bit file that's because you are viewing an HDR video file on a non-HDR display. 10-bit is a part of the HDR standard, but not the entirety of it. There are non-hdr 10-bit releases available on rarbg, and those will display on a standard gamut monitor just fine (maybe a little bit of banding if you don't have your video player set up correctly).
If you have a wide-gamut monitor or television that is not HDR (uncommon, but they're cheap on ebay) then those rarbg releases are godsends.

Essentially don't ever download anything that's worse than the standard music bitrate of 320kbps, for movies it's usually around 384kbps and up that would be acceptable.

To all the brainlets ITT; here's a comparison of two different version of a movie. This isn't a YIFY comparison but it might as well be. One is poorly encoded, leading to a blurry, out of focus image that can distract from the experience. The other is a properly encoded version that is sharp and clear. Why would you not want to watch a movie in the clearest image quality available? Why would you want to watch something that looks like you're watching a VHS tape through glasses smeared with Vaseline?
