I definitely agree. South Park is one of the few shows I can go back and watch even though I've seen every episode multiple times. I don't know what it is but there really was something special there that slowly died off. I think Matt (((Stone))) and Trey should take a hiatus for a few years and come back, maybe that'll rekindle the series.
