The in universe explanation: Grievous was basically the prototype Vader cyborg. Nothing but lungs, heart and digestive system and his head was all the survived a blast in space. He battled against Windu who almost beat him and then withdrew tactically after Windu crippled his lungs.
The actual real time events that took place was he saw how overwhelmingly positive the response was to Genndys Grievous and felt threatened and responded like the insecure fag he is because he felt grievous would have stolen Vaders transformation story Thunder.
