Because originally film was seen as an extension of the stage, and on stage you have to be extra expressive because you're performing a very large crowd and you're on a comparitively tiny stage.
That said, I get very nostalgic watching old movies, even ones from before I was born, and part of the reason is that I love that over-the-top expressiveness of Audrey Hepburn, Cary Grant, Judy Garland, etc.

She was neither a huge box office attraction nor did she get the kind of tabloid and media attention like Elizabeth Taylor, Grace Kelly, or Marilyn Monroe did. She almost had more box office flops in her career than she had hits.
She was definitely a leading actress of the time and admired for her style and acting, but not as popular as her peers.

Exactly. They had to project their voices as loudly as they could and use body language. I wouldn't say that Audrey Hepburn did that in all her movies, but that school of acting she and so many others of her generation subscribed to probably took cues from the stage. I guess I like it because it's kind of a heightened version of reality. It doesn't work for every film, but when it works it works.
