They changed malachor v, the mass shadow generator, and the mandalorian wars. 3 very important things in the kotor timeline, they've also changed how lightsaber crystals work.
Kannan says in the episode those 3 things are changed in that they're not allowed to go to malachor because of "legends" and Ahsoka says "there is always a bit of truth to legends" implying they'll chnage more. It's pure disrespect towards kotor and legends in general.

Basically it did not happen, the level of technological advancement in the galaxy isn't constant any more, in the past people travelled using traditional sub-lightspeed crafts, hyperspace was not discovered up until ~1000 years before the prequels and its discovery led to the creation of the Republic. Absolutely nothing from the previous lore carries over, except for probably some wink-wink easter eggs. Also thousand years ago Sith looked like literal samurais, ghosts of ancient jedis were wearing medieval armor.
They've hired GoT dudes to create GoT with lightsabers, they're making the Star Wars past a literal fantasy setting.

I'm okay with the reduced timeframe (aside from retconning the whole "thousand generations" thing) since the multiple millennia thing was awkward to explain away in terms of static tech and was mostly unexplored padding anyway. However, a compromise could still be reached with a galactic dark age that only ended about 1000 years ago with stuff beyond that left somewhat ambiguous. Maybe there was a yet older Republic that was replaced.

Let's say the stuff from KotOR is the status quo of what goes there's hyperspace travel and construction materials that can endure a planet sized shell of buildings, what would you expect to have changed between then and the OT, apart from aesthetics? The galaxy is a fucking big place. How fast do you expect new tech to spread? If they stick to those numbers we do get the sense of technological change on some scale and they can still leave room to not write the old republic stuff out of existence. That being said, I'd think it would be kinda neat to not have every kind of technology get reverted to something more primitive, e.g. light saber tech using kyber crystals could be new and clunky, but that doesn't need to be the case for, say, space travel tech. Same as I wish the Solo movie hadn't been a compressed booklet of everything notable info tidbit about Han in one single movie adventure.
