I don't skip them, but after Melfi gets raped and chooses not to tell Tony, that kind of completes her arc. For the rest of the show, the therapy scenes are hollow. It's mostly just Melfi going back and forth as to whether Tony can be treated, and Tony going back and forth as to whether he wants to continue going to therapy.
