I started watching TNG a few months back and quit it about 3 seasons in. The show being low-budget didn't bother me, it was the episodic firmat which killed me, I just wanted a plot dammit, something with the Romulans, a war. Show is just so slow moving and boring. The fact that all the "aliens" are just humans with bad makeup didn't help either.

I don't know how you are going to watch it, but I'm assuming streaming service. In my opinion Fan Collective dvd sets from bit over decade ago contain pretty good sample of episodes from each of the shows and can be used list. Those thematically connected collections of episodes from all shows with exception Captain's Log. That contains captain actors favorite episodes and two episode each show as voted by fans. What You Leave Behind and These Are the Voyages... are series finales. Also These Are the Voyages... being voted as fan favorite is either trolling or TNG fans fucking up vote, as people that actually like ENT consider it one of the worst episodes of the show.

Are you fucking kidding me. Star Trek was never a low budget show. TNG's, Voyagers and DS9's all ended up being the most expensive tv-show episode ever made. Much higher production budgets are rather new thing when it comes to tv-shows.

It is episodic so doesn't matter much, but I'd probably go with stardate. Quality generally drops on third season as they got budget cuts and had film more on sets.

Start with TOS. It gets good quick and only gets to really bad episode in Season 3, but even then they are tolerable because of how charismatic the main 3 are (Kirk, Spock, Bones). Don't skip around, they are a blast to watch.
TOS movies are all great EXCEPT 5. Skip 5 and don't ever think about it again. There's a shitty episode in the TV series that is basically a shorter and less boring version of 5, but it has cringy songs.
TNG is garbage for many many episodes until it finally starts being watchable. I'd say skip the first two seasons, but you will miss out on a lot of character building so you are gonna have to slog through it all.
DS9 sucks imo. Star Trek is meant for anthology stories not arcs. If you can't accept Trek episodes as mini, self-contained stories then you shouldn't be watching.

Stardates are made up on the spot, dude... Quite a few episodes also have "Stardate Unknown" as their stardates, so it's pointless.
Watch in release order. There's a really cheap bluray set that has all episodes in this order (original effects and remastered, your choice).

Watch Space Seed and then watch Wrath of Khan. That's the best of the absolute best in terms of Star Trek. Then just watch the original show and then the movies after Wrath of Khan if you want more. Come back if you still want to keep going, but I'd take a break.

I think 99% of the reason people shit on ENT is the opening song, which I would agree with. but the show is really not all that bad. It was really hitting its stride in S4 and I would have loved to see more seasons where they maybe would start fighting the klingons etc.
