I had some VHS versions of the original trilogy, where it had interviews with George Lucas and a woman at the beginning of them. I can't remember which editions they were, even though I probably have them lying around somewhere.

It's clear that only Luke can see them (Leia ignores them and so does the rest of the party), so it makes sense that they would appear in a way that he would recognize. When young Anakin appears Luke should be like "who the heck is this guy?"

The SE celebration never sat right with me less because of aesthetics than for story purposes. Did the imperial military simply disappear when the Death Star blew up? Surely their garrisons on Bespin and Naboo (let alone Corruscant) would have crushed such celebrations of their dear leader being killed.
