He isn't a Knight of Ren or Young Palpatine but he is playing the main antagonist of IX, and the saga as a whole. His character is essentially what ties all of the trilogies together as JJ said in his interview.
Smith has been cast as an ancient force user, the first jedi, who turned to the dark side and was felled by his sister, a fellow jedi who served the light, much like Rey. However he had grown incredibly powerful in the dark side, a child of the force like Anakin and was able to imbue his spirit into an artifact.
Centuries later he resurfaces and infiltrates Bane's Order of Sith Lords, he discovers a Young Palpatine and together they vow to uncovered the secrets of the force, which ultimately leads to the creation of the chosen one, Anakin, as the force recognizes that Matt Smith's character is a massive threat.
Ultimately Plagueis is murdered by his apprentice but having learned the secret to immortality he is able to reincarnate as the being who would come to be known as Snoke. He waits in the shadows, amassing power in the Unknown Regions while his apprentice builds an Empire.
The reason Palpatine was so fascinated with the Unknown Regions was because he sensed a great dark side presence, a presence similar to what he felt around his master. Upon the Emperor's defeat at the hands of the Chosen One, Snoke moved to seize control of his former apprentices assets and form the First Order.
Snoke was fascinated by the force and how over the millennia it has brought about chosen ones or vessels to carry out it's will and maintain balance in the galaxy. As he says in TLJ "Darkness rises, and the Light to meet it". Snoke was the very first of these "vessels" and now Rey and Kylo Ren are the new embodiments of the dark and light.
Snoke took an interest in the Skywalker bloodline, becoming Luke's alky for a time, but Luke saw through his lies and the two ultimately fought. Snoke's disfigurement was caused by Luke. After this, he turned his attention to Luke's nephew, intent on having a vessel of the force under his command. He ultimately succeeding in turning Kylo but was betrayed again, he also tries to turn to Rey to his cause but fails.
He has sent the Knights of Ren on a search for the Door to the Beyond, so he can gain access to the realm of the force and destroy it. Concurrently he is also preparing a force powered weapon that will purge the galaxy of the force, or rather sever every living beings connection to it, preventing the force from controlling the galaxy's destiny, he essentially wants to kill god and has waited centuries to do it. He has grown to resent the Jedi, Sith and their cycle of destruction and wishes to bring it to an end.
Rey is also a vessel of the force, which is what Snoke meant when he said it had awakened in her, explaining how she's so powerful. And Luke's refusal to leave the island was connected to Snoke, for as long as he remained at the first jedi temple, Snoke couldn't access his full power nor could he set foot on the island himself, hence his need to send Kylo and the Knights of Ren. A part of his spirit was being held there but now he is free and able to reincarnate in IX.
That's the jist of it anyway from what I can gather from this source and what George has said about the sequel trilogy. It sounds a lot like Kotor desu.
So I guess the whole “there’s only ever two Sith - master and apprentice” has been thrown out the fucking window then

It would be the only logical direction they could've went in. Have the first movie be about the origins of the Jedi and a select group of them be not satisfied with the way they run things, eventually they discover the alien race of the Sith and are tempted by them. First movie ends with them leaving the order. Second movie is all about the Sith order being formed while the third movie could be about the first great Jedi-Sith war happening.
