1 and 4 is all you need. Personally I thought Rocky Balboa was good too, but I was young when I saw it so I'm not sure anymore.

Rocky II isn't that bad, but III and IV are miles better. V isn't worth your time unless you just want to watch Stallone hamming it the fuck up.
