No one wanted Stannis to solo the night King you idiot. The interesting thing about Stannis that made people like him was that his personality didn't allow for political machinations like Cersei to happen. He was a religious zealot in the show but in the books he's a complex character because he has a standard of morals that he refuses to bend on. So while he wasn't perfect and he definitely wasn't a good guy he was at least a guy you could respect. That's the reason why they show got popular in the first place. No one was the good guy. Even Ned Stark who is known for being honorable was honest to the point of stupidity which is why he died. It's their flaws and the fact that they can be killed despite being a main character that made the show interesting. Not the chosen one riding into battle to fight the literal embodiment of death. That's why the white walkers and the night King are the least interesting thing about the show. Because there is nothing to them, they just want everything to die. And since we know that can't happen his threat is nulled. The only interesting thing about him and his group is the effect that he has on the southerners in that their political games don't work on him.

This story was always going to devolve into zombies vs dragons in some big spectacle bullshit. The first chapter of the first book sets this up pretty clearly.

The Night King's objective, you ask? Perhaps he's marching south in the hope of killing everyone and finally ending the dullest TV series of all time. Seriously each episode following the sons of Ned Stark and Bobbie's boars and bastards from Westeros as they fight assorted fantasy villains has been indistinguishable from the others. Aside from the gloomy imagery, the series’ only consistency has been its lack of good writing and ineffective use of special effects, all to make the world unmagical, to make action seem inert.

Perhaps the die was cast when Fat Fuck vetoed the idea of someone talented directing the series; he made sure the series would never be mistaken for a work of art that meant anything to anybody, just ridiculously profitable cross-promotion for his books. The Game of Thrones/Song of Ice and Fire series might be anti-Christian (or not), but it’s certainly the anti-Lord of the Rings in its refusal of wonder, beauty and excitement. No one wants to face that fact. Now, thankfully, they no longer have to.
