First scene of the entire Prequel trilogy should have been Padawan Anakin having a force nightmare about his mother. From there you keep the stuff about him providing security for Padme and eventually falling in love with her (With better fucking dialogue obviously), and have him eventually make it to Tatooine to see his mother die. Afterwards you keep most of the stuff that actually happens in the 3rd act of AotC including Anakin losing his arm and marrying Padme. After that you go right into the Clone Wars and having Anakin become a hardened battle commander as well as illustrate his further seperation from the Jedi and take time to flesh out Obi-Wan's and Anakin's relationship. From there I think you end the second movie on something to set up the finale and basically have RotS but maybe with some tweaks. That's how I would fix the prequels.

Why not complete the parallels with the original films and make him Luke's initial age? That way, we get a sense of how things could have gone very wrong. What if Anakin is a teen to late teen at the Jedi temple. He barely remembers his mom and has no knowledge of his father, just where he came from. His journey is trying to finfld his mom and in the process, he learns he has no father and was born of the force. The Jedi have been training him to fulfill the chosen one prophecy without his knowledge (as knowing he was the chosen one might affect him negatively). This causes his initial mistrust of the Jedi and Kenobi but is pushed to the side as he and Kenobi get caught up in nearly the same plot at Ep 1, just with Anakin falling for Padme sooner.

Anakin was troubled kid that had issues with dealing with loss and grief and fucked up royally. He wasn't some flawless angel that one day just flipped a switch. Also being evil does involve some heinous shit not just dressing in black and wearing a cool cape. Clones are not Jedi clones and whatever else you have a problem with cause you had some preordained expectations when you came to the cinema and expected that George Lucas is gonna tick all the boxes you made in your head about what these movies should be, cause he was never gonna have the same ideas you had.
