Nothing wrong with the basics- the hot sauce you use can give you plenty of variety. What are you going with?

not OP but i just kinda wing it. Use a mix of ground beef and italian sausage. start with bacon, onions, garlic. some red/yellow bell pepper. I do like beans in mine, usually kidney of course and pinto. Spices I'm not sure I used quite a few.
