Inflation means overvaluation of your currency you brainlet. Public works and industry is good for a stable Gondorian dollar. So is war. But a stagnant world with no war and no industry would fall prey to rampant inflation from the lack of cash flow.

Since the economy is already on full throttle after the war and the high demand for weapons and food, the increased demand from more money left with the people would have the price on products increase and the salaries raised to match that increase. It would create an inflation spiral deadly to Gondors fragile economy!

Non retard answer:
Gondor is a feudal kingdom with several fiefs. Aragorn probably got trade going again and used the income from tariffs to help rebuild the war torn farms. The movies don't really show it, but the Pelennor was littered with farmsteads and smaller villages that all would go to Osgiliath or Minas Tirith on market day. I guess he'll also reduced the tithes for farms to a minimum and made some deals with Rohan to help with grain shortages.
Another measure to reduce inflation would be to increase the silver content in the Gondorian coins and reduce the amount of coins that are circulating.
I also think he'll use prisoners of war, like captured Haradrim/Easterlings for rebuilding projects.
