I find it funny that Alex Honnold is the most famous climbers in the world by far. There are literally multiple possibly 100's women who climb harder than he does. El Cap is 5.12 grade, which most people can reach after a year or 2, There are people in their 50's and 60's who can do the same thing.
Man on Wire guy never rehearsed his feat on location. He had to practice on homemade lines a few feet from the ground. He never experienced the windiness of TWC summit before the day he walked. Rock climber guy practiced dozens of times on location with rope. He said he was never afraid. Therefore, the Man on Wire guy was more mad.

Ski jumping is fun, and the chance of death or even serious injury is small if you know what you're doing. I'll stick to small hills, though, where you jump like 10-20 meters.

To get bigger you increase calorie intake and lift heavier and heavier weights. To maintain the same size you just lift the same weights without increasing them. AFAIK most rock climbers develop their strength only by climbing, but when it comes to the really difficult extreme climbs people have pioneered some dedicated training.
The German climber Wolfgang Güllich invented the campus board, also called Güllich board, to train for a specific very difficult boulder problem that he didn't have enough strength for. Lots of elite climbers use that stuff now.

not him but I'd say beginner climbing is about getting your upper body and grip strength up to a certain level and just learning technique (keeping your center of gravity close to the wall etc), intermediate is about core strength and flexibility (being able to activate the muscles in your limbs at awkward angles, while holding awkward positions), and elite climbing is about all kinds of strength you could possibly have. elite climbers need elite leg strength to make jumps and to hold onto tiny holds with the tips of their toes.

I suppose the most basic test of climbing fitness would be doing pull-ups and dead-hangs. That's an extreme simplification, but it still involves the same muscle groups: hands, forearms, back and upper body in general.

The actual activity of climbing El Cap is so much more complex and involved and much more of a "feat". (theoretically many, many more people could feasibly do what Petit did (actual skill wise) than Honnold)
You wouldn't even need that much stamina or preparation (for the actual crossing part). Climbing El Cap took years of perfecting every movement. It is superhuman
