This was their plan all along, see: Disney already controls a good majority of the entertainment industry, so what do they have to gain from buying Star Wars? Well, let me ask you this: Why would they get rid of decades of lore and world-building, just to release a mediocre remake of ANH and then a god-awful sequel? I'm not talking about it's legacy or why people are still invested. At no point did I say any of that, either. I said the thing that made Star Wars Star Wars is and always has been the special effects and cinematography. Even when the PT was getting absolutely ripped for it's goofy story, it was still praised for its effects and cinematography.
Even then, people are even more in love with the visual aesthetics of Star Wars than the story. The effects aren't even dated - they're hold up incredibly well, even today. The EU fans were mostly in love with the aesthetic. The gaming fans are pretty much only in love with the aesthetic, since the stories there are pretty much all a joke.
It's a visual thing. I'm sure there's plenty of people who legitimately don't care about the special effects or cinematography at all, but the goofy hero story of Luke isn't really important to the wide range of the audience. Some very diehard fans at most.

No, it wasn't. Peter Jackson's team pioneered every single bit of tech used to make Thanos with the Lord of the Rings, over a decade before hand.
