Why do big cities in medieval movies / shows never have farms and houses outside the walls? Even if the walled city is capable of housing the entire population, shouldn't a large percentage of their population be farmers?

Its the same thing with Winterfell and cities in Game of Thrones.

Because showing their tax policy and farming system isn't interesting in a fucking high fantasy setting.

In the book, the siege of Minas Tirith takes place under a layer of smoke from Mordor that makes it practically night, so orcs can function better. It takes places in these fields and homesteads. Just imagine how complicated and unpractical these scenes would be to film, and how unsatisfying they would be. Viewers wouldn't have a sense of location or direction to create a mental map of the battle in their heads. They couldn't show the size of Mordor's army, the rohirrim charge would suck, the oliphaunt charge would suck, the post-battle scenes of assessing damages and rescuing the wounded would suck.

In the movies, this battle was very satisfying, because it's much more elegant to have a flat dusty field as far as the eye can see. Then, anything can happen, and you barely have any constraint to what you can show.
