From a powerset perspective, he'd obviously be a lot different, and this depends entirely on how the story writes gems reacting to Kryptonian skin, we're going to assume for the sake of argument that its a 1-1 with humans. Now, from what we saw when Yellow stomped him, the shield itself wasn't able to tank a hit that Superman himself could easily shrug off in most, but not all, incarnations, so depending on how that goes it might be Superman with healing powers+some shields he could use for civilians but are useless for personal defense. Very helpful for Supes line of work, its a great fit.
From a personality perspective, Steven would be entirely different. Just ground up different. No way would Superman let the Gems do all the raising of the kid, and unlike Greg, Superman would have to be there from jump because his Kryptonian powers are going to be just as dangerous as his Gem ones would be. He'd toss Pearl over the horizon if she tried that shit grabbing his gem too, and he'd be able to hear/see that happening. He'd definitely instill Steven to be a more proactive person with his superpowers, something that would only grow when he learned Steven has healing abilities. I'd like to think he'd be open to Steven wanting to live a normal life, but its just as possible he'd fall into a very understandable mentality that someone like Steven can't just brush off all he could do. There would absolutely be huge pressure to live up to Superman, he's freaking Superman, not some washed up singer in a van. The Gems and Supes would no doubt clash a lot, which would probably add some strain on him, but ultimately he would still be the noble, nice, caring person who wants to make sure nobody gets hurt because that's as much a part of Superman as it is him. Oh, and he'd go to school. Actual school. Superman wouldn't take this 'let rocks with no social skills teach him' thing, he didn't with his kid in canon.
As far as dads go, Supes would be one of the best fits.
Thinking about it, Steven could still keep the Universe in his name. How?
It would be his superhero name, he first came up with it as a kid, and though he forgets, Superman doesn't, and reminds of it later on when he actually wants to begin heroing.

That's one of the 'how the story interprets it' thing, because it could just as easily be his Kryptonian side drains the gem dry like a vampire and that causes drama as he's literally killing the last thing his mom gave him, and himself, or its just another powerup he can use if he gets Red Sun'd.
All I know is that the second Supes figures out about the atrocities the Diamonds have committed, he’s gonna cancel them harder than Cartoon Network cancelled Justice League Action.

If anything, his crystal and kryptonian abilities should work in perfect balance, with him gem abilities getting a bigger amp on account of his higher reserves of sunlight being stored inside, while his Gem can act as some sort of back up battery, when in presence of red sunlight or when he goes without a sun.
Of course this probably means his shield and bubble are vulnerable to kryptonite.

This is way more broken than initially thought. Superman's pure physical abilities augmented by sci-fi-magic powers would be extremely powerful, ridiculously so. He'd be able to protect everyone in a fight, heal anyone who managed to get injured, and he wouldn't need to wait a week before the dead raised this time! He could do it right away with some tears! Though I think Bruce would insist he not use that on him, since you know, Pink Knight doesn't have the same ring to it. He could even dreamwalk and control bodies.
Admittedly I don't know how good it would be against magic because the Gems are supposed to be some weird blend of tech and magic or just tech that works like magic, its never made clear because SU isn't a very detailed world. Stuff like Yellow's zaps and Whites powers seem to imply that its tech based and only work on the same tech, which is why organics aren't affected by them or Blue and they can't fuse with humans, but a tech-organic hybrid can, so any magic resistance is probably null. Still, even without that he'd be a top-tier powerful fighter in the DC universe, downright broken in some iterations.

Personally I consider Gems to be similar to the Emotional Spectrum or the Power Cosmic, sort of like a middle ground between magic and science.

Would they see Supes as a godlike figure? Maybe the explanation for their colonization is that’s it’s an extension of the Kryptonian programming to conquer and colonize planets.

I say that this version of Superman isn't heroing when he meets up with Rose. She probably meets him at a vulnerable point in his life, when he feels more alienated than ever. He probably sees Rose as someone who understands what he's going through, and they probably share their dream of living alongside humans and protecting them. They totally plan out what's going to happen as far as Steven is concerned. Supes drops his League responsibilities and devotes his time to raising Steven in Metropolis. He only sends him to live with the gems once he realizes that he can't step back from his role as Superman, and he wants Steven to learn about his gem side. He pops back in to visit Steven often. Instead of chatting in the town or on the beach they often talk while floating above the lighthouse, watching for gem monsters and alien threats.

Gems pull energy from the universe at large, they convert that into light I guess? I'd say his gem side helps prop up his Kryptonian half in red sun situations, but it probably isn't fun.
Honestly I'm not sure Pearl would treat Clark like Greg at all. At least not once she saw him fly. She'd be jealous as fuck, but she'd probably understand Rose being into him.

A power ring would get along just groovy with gem physiology. A Pearl with enough will could even put the ring and lantern in her gem.
