Pearl is a gunslinger and she has lots of nice, classy, ornately-designed old pistols going all the way back to the matchlock era. Her strategy would be that she cleans and loads them all in her sparetime and than just runs through them all in battle without ever stopping to reload. She'd stow her spent pistol before whipping out another.

Like a gunslinger spin? You can use just about any properly weighted pistol with a trigger guard for that, but it's usually a single action.

Steven can be like Jacket from Hotline Miami where he goes in unarmed and he just picks up and temporarily uses whatever weapons he comes across in the field, in conjunction with his fists and shield. He knocks his foes down, grabs their gun/blade/club, and then uses it for a bit before hurling the whole thing at another foe when it's out of ammo.

Would Pearl just consistently use the same carbine, or does she alternate between multiple other rifles? Does she upgrade to stronger or more unique carbines as the show goes on? Like, does she start with an M1 carbine before getting a hold of a modified Ruger Mini-14 with slick wood furniture?

Given her background as an engineer, I think Peridot would prioritize in 1) explosives and 2) experimental laser/energy weapons based on gem tech. Her load-out would be kind of eclectic, as she'd have some human-made grenade rifles and bombs but mostly just improvised "Anarchist's Cookbook"-esque crap that she put together using whatever earth materials were within arm's reach.
I bet she'd look at diagrams of old human weaponry in textbooks and then try improving on it, or she'd try recreating gem weapons with extremely crude materials. Maybe she has a barrel of homemade Panzerfausts whipped together using tin cans, PVC pipe, and nitroglycerin.
