Humans are always shown to be overpowered as catalysts, because we need something to feel special about when we see humans alongside awesome superpowered beings. Steven as a special catalyst amplifies the base power of a diamond.

Because Pink Steven is the undiluted, unfilted, raw power of a diamond, with none of the emotions, thoughts, or controls it should normally have.

White could have overpowered him had she gone all out, no holds barred, putting everything into defeating him... but no thinking being can access that degree of power normally, even under extreme stress.

He didn't fight them. He put up a shield--the "weapon" associated primarily with his gem and his mother's legacy--and blew White's own power back at her. Nobody was overpowered, they simply couldn't breach Pink/Rose's/Steven's shield, and broke down when they realized Pink Diamond really was gone for good.

When Pink/Rose put herself into becoming half of Steven, it's pretty easy to assume that it also included connecting all the metaphorical wires' controls to the Organic being that was Steven.

When White Diamond separated them, all the safety measures evolved into place to ensure a long meaningful existence were severed, and became akin to an overclocked computer.

I wouldn't be surprised that if White had held out and continued to fight, Pink Steven would have burnt out while Human Steven died from his fleshy parts collapsing without the stability of gem powers he was grown around.

Agreed, if our bodies didn't keep this limitations in check, we'd basically destroy ourselves from within. Our muscles don't naturally go at 100% all the time because that would start shredding them apart and damage the bones in our body. I suspect that Pink was intended to be the leader that leads from the front. The approachable diamond that the gems can love even as they fear the others. The good cop to the other 3's bad cops maybe or just the leader most in tune with the masses. But instead something went wrong
either Pink didnt develop the way they wanted, maybe she was flawed to begin with. Or maybe White was putting all her own flaws in the other diamonds. Whatever the case may be I think the role of Pink Diamond was meant to be closer to the other gems

I think that it was said somewhere by Sugar that it was because Steven had to struggle and grow in order to gain experience and control with his powers, whereas White Diamond just had the powers that she had to begin with, and never really worked at improving them or trained.

It wasn't White, Yellow, and Blue. It was just White. She talks about spreading herself thin. When she's doing that control of someone else thing that's clearly just her splitting her power to make someone her slave, not her multiplying her numbers in any meaningful way.

I'd say Yellow is probably the most powerful in raw strength and she clearly kicks Steven's ass if she's driven to. White just has a terrifying set of powers that makes her good at controlling other gems.

We've seen Steven do some absolute bullshit that the other Diamonds do not seem to possess. Steven could swim around that "nether zone" while he was passed out, something Yellow and Blue could sense, but not necessarily have the same freedom that Steven did.

Whatever Pink Diamond did, her gem now seems to be "uncapped". I don't know the terminology with computers, but isn't there some way to get more bang for your buck with RAM or whatever, at the cost of overheating it or wearing it down more quickly? That's what I assume is happening to Pink Diamond's gem. Or maybe not, and we're just gonna say "Steven's human empathy is fueling the gem to greater reaches than it could ever go before."

Meanwhile you've got Goku actually being taught by masters on how to be a stronger martial artist. Now Vegeta, who was (briefly) the strongest saiyan baby in history, struggles to keep up.
