What about building up on the premise of the thread? I will try to explore an actual change with the idea of making Marco an older girl on Star VS.

Well as the "responsible adult" maybe Moon keeps in touch with her to see how her daughter is doing? Maybe there are some tension when Start starts been more close to Marcia that with her own Mother.
With Star friends the things may change a little, as an adult Pony head could see her as announce they need to ditch to have fun, there could be an adventure where Marcia uses her status as an adult to let them in some "adult club" and things inevitable go south.
Marcia could be Janna's old babysitter and still have nightmares from that time when toddler Janna let the raccoons inside the house. Tom could be trying to hit on her and she would need to find a way to tell him no before things get to dangerous.
Instead of trying to impress Jackie, Marcia's early deal could be trying to be the "cool teacher" on school.
Neverzone Marcia could be a thicker milfier version of herself, there would be a running gag where everytime they return to the neverzone they meet one of Marcia's ex-husbands.

basically one of VampireMeerkat's more important headcanons is that Eddy is going to go through one hell of a growth spurt once puberty comes a knocking, based off both his older brother being fairly tall and the glimpse we see of his dad in one episode being outright huge, he transfers that over to the gender bent version as well

Sure but consider the older aspect as well, half of the experiments Johnny gets into as a lab rat is because he is a kid with no money or needs to borrow a thing. An older girl can get a half time job and just buy stuff.
Two things I could thing would make the show more interesting one Johnny is a canon trap in the show, he can pass as the princess of some kingdom for example, would that make Jenny the perfect reverse trap or just the most gorgeous woman in the world?
Second in this version should she be an older sisters to the twins? or a fraternal (non identical) triplet with them? with the latter you could get stories that take place in school since they would be attending the same class.

Interesting question, first we need to establish what the world girl means. A girl is used to describe a wide range of ages from a young child to a young adult, younger than that you call a baby and older than that you get a Woman, a Milf or a Cougar.
Older on the other hand puts the range in the older side of the spectrum but also it could be used as simply to describe being noticeable older that the character current age.
So following that logic and Older girl could be used to describe a young adult youthful enough to be still called a girl or someone younger than that as long as they are still older that their normal age.
So by that rules Magoo would be a young adult while someone younger could be a teen or someone in their 20s.

Mabel on the other side is unaware of what is going on.

By the way they described it. It's obviously a reality change. But not having any of the characters realize at all what's going on would be pure fan-service with no way for the characters to interact with the changes. So I'm guessing they will gradually become aware. If I was the one writing it, I would use it as a plot trigger. Example:

>Dipper tells her it's an awful idea and they should research them first
>plot starts
>they need to go into a fancy country club for some reason
>can't get in
>Mabel decides to try throwing the dice
>Dipper turns into a bitchy rich girl

>this repeats with Dipper turning into different girls that lets the plot move forward
>at some point they think back to how they managed to do this or that and realize something is off
