The original Epic Comics run is god-tier, better stories and Cenonite designs than most of the movies combined
I haven't read any of the Boom Studios stuff that came years later, seems like it was more ongoing narratives and less one-shots like the original series
Also Marvel had a Pinhead mini I know nothing about, but it's under Comics Code so I expect it's probably neutered

Their Hellraiser comics was an anthology series, various short stories per issue. Clive Barker signed off on it, but does not participate (I think? Would have to check). Includes some big names like Dwayne McDuffie, Neil Gaiman, Kevin O'Neill, Kyle Baker, etc. As it goes with anthologies quality varies from story to story, but most of it is good. Stories ranges from medieval drama to wild west tales to stories taking place in hell itself, all delving in or expanding the lore. Worth checking out. I think it was reprinted by Boom Studios as Hellraiser Masterworks or something like that.
There was a peripheral volume called "Book of the Damned" which is a four issue miniseries of various texts related to the universe, all written by Larry Wachowski (yeah, same one from the Matrix movies).

Their main series is a sequel to the first two movies (it ignores everything after Hellbound) so if you liked the movies this is a good place to start. An older Kirsty is leading a team of other survivors and they're going around locating and destroying lament configurations, all while Pinhead is plotting something of his own. Also appearing is Harry D'Amour from Barker's story "The Last Illusion", or the movie "Lord of Illusions" which is based on the story but isn't a straight adaptation. It takes some weird turns, but as a follow up to the movies it's much better than any of the shitty sequels.
I know there's a Pinhead comic out there that even crossedover with Marshal Law, but I haven't read that.
The problem with Hellraiser is America is too shy about sex. It can handle Gore and violence just fine, but sex and pleasure ate just too taboo. So this series appropriates a bunch of themes and concepts from fetishes and hardcore bondage, but it is never able to faithfully explore those themes because to stay on the safe side of authority it has to minimize the sexual side. Fundamentally handicapping the concept.

You know, if you just remade Audition but she ended up being a cenobite in the end? and you just took the story from and adapted it into the ending? That'd be a pretty good movie.

Pinhead plays with the estabilished epic continuity and plays with the concept. IT feels very vertigo-esque

EPIC/ Marvel Hellraiser was the best and still is after all these years. There was also a fan-made comic hellbound chronicles hosted on some hellraiser fanpage, don't know what happened to it

Why was the Scarlett Gospel such a terrible piece of fanfiction?
It had one cool idea and that's about it.
Some of it was collected into paperbacks over the years but none of the reprints have been complete collections, annoyingly. BOOM cherrypicked some of the best stuff for their 'Masterworks' volumes, which is the most recent attempt at reprinting the Epic material
