There's two things to it.
First, I doubt Steven could Talk-no-Jutsu someone that was purely or cartoonishly evil. He's never encountered someone who straight up just wants to destroy, someone who's whole happiness and being rests on harming others.
Second, even if the person is one that can be reasoned with, if they got the ability to kill him he may not get to through to them in time.
Not much to do about the former, but they clearly thought of the latter. Steven is pretty much a pure tank. Shields and healing at fucking max so that he can just take ridiculous hits while keeping up his talking and reasoning, slowly breaking down the opponent's will both through reaching them emotionally and physically tiring them out as they realize they can't break him.

But more importantly if you think Vader would attack someone who has healed him then you really know fuckall about the character. Vader is not a lolevil villain like Michael Myers, He's a retarded good guy who is in a lot of physical and emotional pain. Steven is actually one of the best characters to redeem Vader, not only could he heal his body but Vader's other problem is the tremendous guilt he feels for the things he's done which feeds into his self anger and is the main thing keeping him in the Dark Side and Steven's non-judgemental approach would open up the doors for Vader's self-forgiveness, getting rid of his self-hatred and leaving the Dark Side.

Yujiro is interesting. You get the sense the reason why he's such an asshole is largely because nobody is on his level and he's constantly widening the gap between himself and everyone else. You can see in his rematch with Baki that by the end his son put up enough of a fight that he finally gave him his respect. If Steven stayed alive long enough there is a chance he might get him to listen. I doubt he'd convince Yujiro to quit violence though since it's pretty much ingrained into his DNA.
