There's a point in it, who even watches the Simpsons now if not people who has been loyal to it since the early seasons? the only sincere way to show that they care was to change Apu so he's not a stereotype anymore. some might say that he was never a stereotype, not a negative one at least, given that he was the most solicited bachelor, is his "own boss" and has a sexy wife so there's no reason to double down because there """""never"""" was a intention to be negative towards Apu.
the problem lies in how audiences reacted to Apu and how they in turn behaved towards the hindu population in America, which is what Hari Kondabolu was all about in that documentary.
the problem is the audience, so much that Apu had to be removed from the show.

Actually, by the time the documentary came out Apu hadn't even been had a speaking line for years. The writers already felt weird about the fact that he was a stereotype, made "Much Apu About Something" to talk about it (it was a shitty episode and really didn't say anything when you get down to it, but hey, it's something), and then quietly soft-retired him.
