I haven't heard anyone talk about since 3 months after it came out.

Well, I think Julia Vickerman is very talented but then she went and tried to live out her /ss/ fantasies.

a bit of both, but to answer this kind of stuff is fairly easy to write. most cartoons are also board-driven now, so the artists (who are now forced to be the script writers) don't have to spend too much time on the writing aspect of the show.
it fucks over artists and boarders who now have to do an extra amount of work that they can't always put their passion and effort in while trapping them in an area they don't have much expertise in, and it fucks over writers because it pretty much effectively killed their job market. again, though, i'm being very generalizing and this isn't always the case since most nickelodeon shows are script-driven.

So thats why these empty dull shows are so prevalent, why not just go back to scripts? Im sick of seeing shows like craig of the creek or we bare bears where the humor is flatter then a 12 year old.

because the writing has managed to have a bare minimum passing grade with audiences, and, again, people love cute characters doing cute things. that way networks don't have to hire writers for shows now. so these slice-of-life shows with more simplistic art styles for younger audiences to copy (see MLP, AT, and SU) are churned out en masse.
one could argue about the political climate post-2016 and blah blah blah but this trend started a few years before that
