Well, Fry's original girlfriend was an non-supportive, lying, unfaithful, garbage bitch.

His family was comprised of clueless, idiotic and abusive dopes and his life was shit. He wasn't very smart himself, but he was at least kinda passionate and imaginative.

Leela is presented to him as an intelligent, capable and ultimately caring woman who showed him even the slightest bit of mercy and empathy after he woke up in the future with nothing left of his original life. Not only that, he found her looks exotic-- Fry was the only one to call bullshit on her getting surgery to look different/be more accepted later on.

He was also the only person to call out Alcazar's treatment of her. She represents the great beyond of space that he romanticized as a kid in the past.

Amy was probably more attractive, but she was flirty and flighty; Kip's a better fit for her because both Fry and Leela have some emotional baggage that if they get past their shortcomings, can empathize with each other over and be supportive.
