Really god damn poorly. Ganon jobs like a bitch with the full Triforce. Part of the problem is the first thing he does with literal unlimited power is turn himself into a fucking monster, which reduces his intelligence, which prevents him from taking advantage of literal unlimited power.
Like imagine you have this guy that's basically Satan with the power at the level of manipulating dimensions. And imagine that this Satan got his ass regularly foiled by people he could drop a black hole on at will. You'd call him a bitch, right?

Beyond that, he isn't fucking immortal. He's been killed and had to reincarnate before. He's also been purged before by a wish of the Triforce.
About the only thing I'll say about him is he's basically the most powerful non-deity across all dimensions in the Zeldaverse. That's established by him being the recipient of the Triforce of Power despite being banished to a dark nether dimension post the Oracle games. That shit's supposed to go to whoever most embodies Power.

Even if Ganon owns the full triforce he still can't use it to nuke Link and Zelda because the triforce pieces of courage and wisdom will always manifest for them before Ganon.

That's not how it works. The triforce only shatters once. It's a security mechanism. Once it's assembled again it won't shatter if you make a wish on it. Ganon got the full triforce in the failure timeline. He was still a bitch.
The triforce has a will of its own, but it doesn't have much autonomy beyond that, as evidenced by Ganon conquering the Sacred Realm. Only thing its ever really done on its own is teleportation.

If you think about it for half a second, Lorule existing had to have been a wish on the Hyrulean Triforce.
