I watched some of the episodes back to back with TJM when they were still rerunning it right after it aired, and you're right. The character designs in the old series were lankier and had their movements and poses more exaggerated at times and it conveyed their expressions a lot better. TJM updated the designs to be more in line with modern shows today, but the cleaner short-limbed designs don't quite do it justice.

What made Arnold go from being freaked out when she got close to him to flat out loving Helga?

A lot of characters are damaged in a way if they were portrayed more realistically. Curly is a mass high school shooter just waiting to happen, Chocolate Kid is a PG-rated drug addict, Sid is an emotional, paranoid wreck, Eugene is obviously going through some serious emotional suppression, and Stinky Harold are idiotic bullies who are very well-aware of their low economic status and lack of intellect while externalizing such feelings of inferiority towards those weaker themselves as a defense mechanism. Helga got off easy.

Like honestly, this cartoon is in my top 5 Western animations. I hated it as a kid but it struck chords with me going back to watch it as an adult. It went on for as long as it needed to.

I was hyped for the Jungle Movie but when it finally came, it was a massive disappointment. Further proof that EEnE is basically the only cartoon that wraps up on a good film.
