well the likes of Kreator, Sodom and Destruction would be too heavy for my taste, I consider them death metal although a lot of people disagree.
as for german thrash I like, paradox, vendetta and angle dust if they count.
it kinda has to have some form of melodic vocals for me to get into.

I can see Kreator being labelled as death metal(Pleasure to Kill in particular was hugely influential on OSDM), but Destruction is more along the lines of thrash metal like Exodus and Slayer. Sodom is more early black metal(at least In the Sign of Evil and Obsessed by Cruelty) in the style of Venom or Bathory.

Death metal typically is characterized by blast beats, deeper/guttural vocals, and downtuned riffs with abrupt tempo and time signature changes. Bands like Slayer and Destruction play in standard tuning(Slayer plays in standard tuning on their first album, but drop D from Haunting the Chapel onwards) and use relatively normal harsh vocals.
I do consider Hell Awaits to be proto-death metal due to the drumming and riff structuring(Which was inspired by Mercyful Fate). Ditto for Pleasure To Kill, but Mille and Ventor's vocals are closer to early death metal.
I also would recommend Living Death if you like Running Wild

I thought the definition of death metal was unmelodic harsh vocals, now I know (although I do think its splitting hairs as it does seperate the metallica trash with the slayer trash, and would be much easier in recommending bands) but thanks for clearing up the defintions,

Yeah categorizing metal(especially the 80s stuff when genres weren't as strictly defined) is a bit finicky at times. Splitting hairs is an understatement
As for Sepultura. The Brazilian extreme metal scene was a lot closer to black and death metal(Famous examples other than Sepultura are the almighty Sarcófago, Mutilation, and Vulcano). Morbid Visions and Bestial Devastation are death metal to me(with a bit of elements from early black metal like Celtic Frost and Sodom). Schizophrenia, Beneath the Remains, and Arise are death/thrash metal.
