She guest stars in AoS and the Netflix shows, Cloak & Dagger (and by extension Runaways) and even Inhumans all make reference to AoS so they're literally all canon.
Agents of Shield had actual movie characters in it.

...They considered themselves canon to an extent up until a few years ago; but Feige and his the films absolutely do not consider any of this stuff canon except Agent Carter. It’s extremely obvious at this point, the only reason that’s considered canon is because the writers of all the Russo films worked on the series so they wanted to put Jarvis in because they like the actor. All these characters will get recast and full reboots eventually/if they ever appear. It’s total non-canon. NO Marvel TV product except for the one in Agent Carter is considered attached to the MCU what so ever at his point.

I still expect the AoS writers to try and correct the timeline to get their show back in a place where it could be considered canon. The finale put time travel on the table as an explanation. It's probably a futile effort since no one will ever acknowledge it, but they'll probably try anyway.
Well the snap didn't happen in the show, despite them talking about how Thanos and crew were actively attacking the earth during the season 5 finale.
They'll probably try to fix it with time travel in season 7 though since they're currently in 1931.
Is the Defenders canon?
I stopped watching right before the last episode of the Ghost Rider season, so I have no idea what's been happening, or not happening.
There was supposedly some discussion of including them in the background during Endgame's finale, so it was at least considered. But considering they didn't and the shows all got cancelled, probabky safe to assume they'll never be referenced again. I expect they'll desire the characters within the next five years, but recast.

Doesn’t matter. Feige still won’t consider it canon. All good if you like the show but it’s not canon at all. Coulson died in Avengers in current MCU proper. The shows strait up just don’t count anymore even if the want to.
They’re going to reboot any relevant characters in universe for sure. Brand new versions untouched for Kevin to play with.

The second season of Carter was them going "fuck, we just did great spy shit and our ratings were still bad, what the fuck else we can try" and just hurling kitchen sinks against the wall until everything broke.
