I was like 10 when my dad pointed out udders are cow's boobs so only female cows should have them. Depends on the context. It's sexist to say that women can only cook, sew, and must put on make-up. It's not sexist to have Robot Jones, who is currently confused about gender identity and human behavior general as is, hang out with a couple of girls who use him to ace their Home Ec class, then give him a make-over and in his mind, he classifies that as "girl activities". It's naive to think that there are not activities and popular interests between both genders.
Pic related also starts out the characters as basic stereotypes (Raimundo is from Brazil, likes soccer. Clay is from Texas and also a cowboy, etc) but they build on it later. It's only used as a way to simplify story and character elements so, especially in the case of children's stories, you can explore an 11-minute episode about Robot Jones figuring out his gender or in the case of Xiaolin Showdown, have seven characters introduced to the audience in the first episode alone and make it easy to understand who they all are.
It can be considered lazy writing, but it's much better to at least have stereotypical characters than in the case of Kung Fu Panda movies where the team members have no personalities because there's simply no time to explore them all.

They have both sets of functioning sex organs and can probably pick whether they want to be a "he" or a "she if they want. Depending on what their physical appearance is, like if they have big tits, there's a chance people will just say "she" if they look more like one. It's still a decision between two, the only people who would force others to say "they" in a conversation when it's super fucking clunky are assholes who want to be special. And "xir" is a joke.

No, there are people online who write "hir" and "shi" as pronouns. I don't know if they're "supposed" to be pronounced differently from just her and she, but either way, I think it's even dumber than pronouns with x at the start being used in the same context.

A simple way to think of genetics is its a ton of switches, intersex is leaving on one or more switches concerning the sex deciding chromosomes that should be switched off. Its an error in the way the genes have been copied or activated.
Most intersexed people are infertile. The ones who arent, can produce ova or sperm, but not both.
Fun fact, humans are inherently female. Males are altered females. All embryos develop as female, until the gene in the Y chromosome introduces male development several weeks after conception. That's why men have vestigial nipples - they develop before the change in the default blueprint from female to male. If the SRY gene in the Y chromosome fucks up, you end up with an intersexed baby. This is why some women can have XY chromosomes. The rarer XX male happens because development of cells in the father can cause the Y chromosome to pass the SRY gene to the X chromosome. You end up with a genetically XX/XX female with male sexual development because the SRY gene stowed away in the father's XX chromosomes in his sperm.

Fetuses are not default female they posses hermaphroditic tissues that can develop into both male and female genitalia, once the sex assigning genes activate one of the sets dissolves whilst the other develops into fully fledged sex organs. Essentially fetuses develop traits of both sexes some of which are lost in natural development.
