Either it's from the timeline where he and Peggy got together - meaning the cap on ice in that timeline is going to be without a shield.

Or he used the reality stone to fix it.

All of the times they traveled they created alternate timelines, even if they changed nothing they still impacted the reality in some tiny way that would eventually have an impact.
And while Thanos dies, the Guardians never form so Ego probably wins that timeline.
And like this user said, he lived in that timeline for 70 years, he probably had a good grasp on whether they needed the shield or not, so he just took it.

Hulk even mentions he's overshot his expected return time or something. He came back to the movie's timeline to say goodby to his friends, pass on the shield, or whatever.

I'd be cool with this phase and the next using different time lines to have cannon elseworlds and fold in the currently non MCU properties as they become available, a number of small dimension jumping plot points distributed though the franchise, then a phase can be ended through a totally-not-a-crisis event merging and partially resetting things.

There's no guarantee Quill would be found by Ego without Quill using the power stone on Xandar.

This is why time travel is always an awful plot device.
