Did they explain why infinity never had multiple incarnations? If eternity represents time, and he gets a new incarnation during each new cycle, does that mean that each's infinity actually dies at the end of the cycle?

Infinity only exists in the 7th incarnation of the multiverse. Unknown if Infinity exists in the current 8th incarnation of the multiverse. Kind of doubtful though since Infinity told 8th Eternity that they will eventually reunite once its his time to go to the place beyond the Far Shore.
