I haven’t seen infinity train yet so I can’t comment on it, but I will say this:
Amphibia has really good story based episodes that built up to a very well done finale. However, many of the one off filler episodes really aren’t that special

There's a strong feeling of danger I got from the first episode -- Amphibia tends to deflate their drama for most of the season
The first episode establishes a clear goal for the protagonist while adding mysterious notes that while don't need to be learned right away, it has been seeded well so far into the story -- Amphibia had this but stalled the hell out of any progression for a long time... I'm betting Infinity train will do this too.
Strong attention to detail and they way Tulip goes through emotions while taking it seriously and not in a lighthearted way was refreshing.
I don't have two more cause I actually like Amphibia too but Infinity Train is the first cartoon in years I'm actually anticipating new episodes for.

Victor and Valentino is the only one that's demonstrably shit. We haven't seen enough of Infinity Train to judge it yet and we haven't seen any of Owl House.
No one had high hopes for Amphibia and it turned out to be the most based show of the current upswing in TV animation. It's not fair to judge IT and OH so hot on the heels of something that turned out completely different than everyone was expecting.

Things fell into a rut for so long because everyone was trying to imitate Adventure Time's off-handed quirkiness even as it slid down the toilet as time went on due to a lack of commitment to itself. The je ne sais quoi that Amphibia has that makes it the Regular Show of this generation of cartoons is commitment to being a cartoon without trying to be anything more.
