It doesn't fix the starvation that actually exists. It just makes people unable to die. Which has some weird implications depending on what can and can't kill you and why. Immortality is odd like that. Like, suppose you never forgot anything. How do you remember anything new? If you do forget things, at what point are you still the same person you were a hundred years ago?
Can people die of wounding? What happens if they're stabbed and the knife is never taken out? If they're cut in half? Do we get a world of Deadpools?

Thanos's real motivation was ego. He's butthurt over getting his genocide plan shot down on Titan, it's the reason he refused to consider an alternative. He was sure that the universe would be "grateful" for the snap, and it's implied by his pre-battle dialogue in Endgame that he expected everyone else to see it his way and carry out their own population control from that point on. He went so far as vowing to remake the universe without those who would/could resist him rather than even consider taking any different approach.

Thanos is not a completely rational actor. He's attached to the original idea he proposed to save his own planet because he's blinded by his ego and he's coping with the loss of his home such that he tries to implement his solution as a way of making himself feel better and feel in control.

But, 2018 Thanos himself clearly had reflected a bit more on his actions and, while still resolute in his goal, had had his ego demolished quite a bit from the loss of his army and his daughter to the point where he chooses to destroy the stones. Why? because he was getting tempted to use them to undo everything and what remained of his ego won out, despite the fact that 2014 Thanos clearly doesn't even hesitate when considering using the Stones
