Would animated shows and films be better if the VAs recorded together at the same time? It feels so unnatural to me that the final product is two people who arent actually talking to each other but just pieced togther audio files.

That's how South Park and anime is recorded.

Basically every cartoon that does it winds up being praised for how snappy the dialogue is and how the characters play off each other.

Why not dress up too?

They'd probably be better if half the budget didn't go to over paying the actors and instead went to producing decent looking animation.

Are there animations where it's really noticeable and distracting that everyone's dialogue was recorded separately? I can't right now remember it catching my attention in any cartoon.

Recording separately is a cost-cutting measure and it does reduce the vibrancy and believably of conversation between characters.

It could ruin your immersion if you think about it too much. like watching an action film and thinking about wires and green screen.

Most shows have people record their lines together. The only ones that don't are the ones that can afford it. Scheduling time in a recording booth is not cheap. And scheduling a celebrity to record with the cast is also not easy.

kinda off topic example. but there's a star trek game where the original TOS cast recorded their voices for the game, and its very obvious they're not having real conversations because tone and inflections of the voices (shatners in particular) do not match each other.

It's a lot more common for animated shows to record lines together, most of the time when it doesn't happen is when a celebrity is involved, someone is out of the area, or it's a dub.
As for movies, celebrities don't tend to have the schedule to record together, which is why they're almost always recorded separately.

zootopia documentary showed main voice actors were talking/recording their lines together only for key scenes.

Just watched the behind the scenes stuff, it seriously looks like a lot of fun acting out scenes for the movie without the burdens that come with regular film shooting.
