Since it's a comic book universe not much would change. Batchick would still get bogus str, int, endurance, etc... because she's Batchick! It is a necessity in case of capture, I bet only a kryptonian would be able to get through Batwoman's chastity belt without the key and even then she'd be prepared with some Kryptonite. She'd sooner die of your attempts than you managing to crack her oyster shell to get at the pearl within.
Having someone like Alfred look after the key is just obvious, better than leaving it unsupervised at the Batcave, no one would suspect the butler to have that specific key amongst all the other keys he has of the manor.

I'd be down for that as well, but there's no need to reverse everything, that's kinda been done already. I think it would be a cool dynamic because despite her being Batman's equal there would be places she may not be able to go as a spy. She may need a male robin for blending in more. Just having a mother figure that's also your mentor could lead to some pretty humorous scenes which would work to help level out the grimdark.
