A fun project that got turned into a stressful job. This usually happens when a creator and head either doesn't have enough initial clout to keep his projects integrity, or just loses his passion and lets others slowly take control. Both were kind of the case as CN does whatever the fuck it wants, but also because Ward began to relinquish to control to people like Rebecca Sugar who want to make a show of their own (which she eventually got to do with Steven Universe) but inserting your own characters and making episodes like you want them is a close second. This trend continued and as the years went on the fanbase died off or went elsewhere.

Penn left, Sugar came in. The downfall started with giving Ice King a backstory and the writers shipping PB and Marceline way back.
Then Fiona and Cake happened, and you got seasonal rot from too many open arcs and pointless characters having their own episodes. Plus, Jake having kids gone nowhere.

Sugar left when the damage was already done. She wrote Holly Jolly Secrets and ruined Ice King's character. Ice King was way more fun before that episode.

Holly Jolly Secrets was written by Xayaphone and Kent Osborne. She had zero input on that episode.

It’s pretty insane watching seasons 1-3 and seeing it change so much after that. It’s just an entirely (worse) new show

There is such a thing as too much lore and needless plots filling up airtime. If Adventure Time Kai came out and cut the romantic subplots, needless backstories, extra character episodes, filler, and open arcs that gone nowhere, it would've ended at Season 4.

You can already notice in the very first episode of Season 3 how that bizzare humor is completely gone. I don't mind that wanted more character development and lore but they lost the charm that made the show what it was.

Even in those episodes that just takes place in the treehouse like BMNoire where BMO is just walking around the house and talks to himself or Holly Jolly Secrets where Finn and Jake are just sitting and watching videos. Compared to Rainy Day Daydreams in Season 1, where they play around with their imagination but everything becomes real. Season 5, A Glitch Is a Glitch felt like a throwback to the early seasons with how bizarre, funny and fast-paced the whole episode was, also that credit music is good.

The world building, characters and the mysteries keept me watching too the end, it's just shame the series lost it's roots and wasn't able to maintain it

I honestly agree. Ice King was better as a villain, and his ceasing to be so was a big loss to the dynamic of the show.

A classic example of Ice King was in the "Hitman" episode. Ever other appearance in later seasons was about Marceline, Betty, sad drama, and trying to fix what isn't really broken.

After having just recently watched all of AT, I have to say that I actually find the later seasons alright but not as good as the first 4 seasons. The only part of the show that I found truly awful was the mistake that was season 5.

The last few seasons with all the mini series almost redeemed all the bullshit, if they had 2-3 more seasons of that, then a satisfying final season and finale, it would've been a perfect balance. The way it is right now, the emotional stuff is a bit heavy.

The mini series was garbage and the pink hair future Marceline arc gone nowhere. It's best to just Ben 10 reboot this shit and start over. CN will reboot this in 5 years to squeeze all the money out of it.
