It was an actual plot point that she made such a sudden and OOC makeover.

Your mistake is thinking people have actually read a 25 year old Fantastic Four run and aren't just reacting to seeing pics of the costume outside of the context of the story.
For one side, that costume is a symbol of stupid 1990s comics and how far we've progressed, for the other, it's solid evidence of a better time when heroines were allowed to be hot and all wore cheesecake costumes. The story doesn't matter anymore.

I guess that that story didn't really stop the angry letters, so they decided to actually make Sue useful by giving her better powers.
