Retcon the gargoyles to just being in Quasi’s mind like it was originally planned and you have a very realistic movie.

Pocahontas was politcally going out of fashion even when it was released, wasn't that good, and doesn't have a big nostalgic audience for it. No surprise that they wouldn't remake it.
Hercules would completely fail to translate into live action. At best they might end up with something on the level of Viva Rock Vegas. They would have to completely rework it, and unlike mulan there wouldn't the the promise of the chinese box office to motivate them.

Disney doesn't want to be reminded of the time all their top animators chose Pocahontas over Lion King because they were trying for Oscar bait.
Hercules might just be not really wanting to deal with Torn and Woods at the same time (go ahead and try and recast them).
