Thanos wanted to wipe out half the universe because she wanted/ordered him to and believed she would love him in exchange. Her reasons weren't as altruistic as MCU Thanos' however. While she did want to prevent extinction by overpopulation, she only wanted to make sure things kept dying at a steady rate, not to mention how the need to keep balance meant she was "owed" souls. Infinite resources would tip the scale in Life's favor, which would be unthinkable.

Number of people would have bigger order of infinity, would be "more infinite" than quantity of resources.
Because it was a shitty plot that was taken from a decent plot and made into a movie to sell tickets.
Read the comics instead, the story is far better.
But ultimately, Thanos is "mad" and that's why he doesn't think logically in the MCU
Doubling the raw material resources of the universe doubles the total mass of the universe itself. This has widespread effects on the structure of the cosmos itself, and would ultimately lead to countless cosmic catastrophes. Simply erasing half of all biomass is much more low-impact. It's greatly more efficient. To double 10 you need to do 10 work. To halve 10, you only need to do 5 work.
