Because Disney doesn't actually care about superheroes, they just want the male equivalent of Disney princesses. If superheroes didn't come with pre-established costumes they'd all be maskless and in tacticool leather/whatever you call Valkyrie's outfit.
Plus it's a difficulty they'd have to write around and they need to stick to formula.
Also it fucks with their diversity BS since they want visible faces of their token brown people/celebrities.

It will in the sense that every one of his supporting cast will know (despite that usually not being the case with Peter) and the government will know and all other superheroes will call him by his first name. We're just supposed to pretend that it never affects Scarlet Witch or Falcon or Hawkeye's situation like it would Bruce Wayne because they have no real social lives or alter egos. They don't change when they put on their suit aka cheap leather outfit and no villains bother to show up at their house.
